Work on a new Shogun restaurant could begin within a month, city officials said.
Last week, at the regular monthly meeting of the Russell Springs City Council, Mayor Eddie Thomas and Russell Springs Economic Development Director Jeramy Coffey gave the governing body an update on the highly anticipated eatery.
“A Memorandum of Agreement went out…to the construction (bid) winner,” Coffey said. “So as soon as that’s signed, we’ll know who the contractor is…(and) we’ll be waiting on them to start work.”
Coffey said an architect with the project spent “about a month…to verify all the bids.”
“They have to go through the numbers,” he said.
“They should be moving dirt within the next 30 days,” Mayor Thomas said.
“That’s the game plan,” Coffey confirmed.
Mayor Thomas and Coffey pointed out during the interim, the Shogun Food Truck has been on site every Thursday.
The city continues to field requests from people interested in locating businesses here, Coffey said.
Thomas reminded the council the third, Springs Cruise-In conducted by the Ol’ Boys Toys Car Club will be held this Saturday, July 19, from 1-5 p.m. on Main St. in Russell Springs.
The popular event features an increased number of participants each month, and also brings food, music and a family-friendly atmosphere to the city.
